Saturday started off without sunshine, and so I decided I would bring some sunshine into my kitchen by baking delicious Oatmeal Cookies. 🙂 This was my first time baking oatmeal cookies, but there is no way you would ever guess that by sampling these. They were by far the best oatmeal cookies I’ve ever had in my life!

What I really loved about this recipe is the Make it Your Own section that gives you tons of options and ideas for what to put into your cookies. Two items that aren’t listed that most definitely should be is Peanut Butter and Nutella. I think those would make awesome oatmeal cookies! 🙂 I wasn’t craving chocolate on Saturday, so I went with oatmeal Raisin cookies and White Chocolate with Hazelnut bits cookies.
For the white chocolate cookies, I bought a White chocolate that had tiny hazelnut bits inside so it was nice and crispy and I just chopped it into little chunks and added it to the cookie mix. I also used my ice cream scoop to shape the cookies into little balls, and I baked them on 180℃ for 17 minutes. I used the Gluten Free flour to make my cookies Gluten Free. The only thing that I changed in the recipe is the sugar amount. I used the brown sugar and I used less of it as I expected the raisins and white chocolate both to add sweetness to the cookies. For my spices, I used Cinnamon and Nutmeg, and for my flavouring I used Vanilla Extract.
The cookies came out beautifully! They were sort of firm on the outside but not hard, and super soft on the inside. I really took my time making them and I think this made them come out so great! 🙂 Also I sifted my flour, and I have no doubt that’s why they came out so lovely and soft on the inside. I don’t bake very often as I’m pretty good at it, and so I really don’t have an interest in gaining weight, especially with the bikini season just around the corner.
