Wellbeing Wednesdays

If you missed last week’s Wellbeing Wednesdays have a look  so you know what’s going on.

This week I’m not gonna talk about the weather much, besides I’m not in London anymore. Everyday is sunny here! ☀ Highs for the past couple of days were 30-31C (86-88F) in Limassol, which for this time of the year is pretty amazing! 🙂
The nights are fresh.

Beach Visits: 1

That’s a bit of a bummer, but I’m not located close to the beach at all. The good news is Swimming Season ends around Halloween time here and the 2 following weeks of November are tanning weeks, so you see there’s plenty of Summer ahead! 🙂

Funny thing happened when I did indeed visit the beach on that 1 day. I had this entire plan to swim and snorkel as much as possible but what actually happened was rather tragic almost. The double fried crispy chips sprinkled with oregano and Himalayan sea salt (pictured below) were my treat for the week, so I really wanted to get some swimming going on after that. I did get a short swim and snorkel session in but then went out to tan a bit, which was a mistake. As soon as my head hit the other towel (my beach pillow) I knew I was gonna pass out, and pass out, I did. An hour later, I woke up much more tired than I was to begin with, and I couldn’t swim anymore because the sun was pretty much gone.

I did however manage a short tanning session outside in the garden the other day, so yay for that! 🙂

Workouts: 3 workouts averaging at about 30 minutes so not bad

Nights out: 3

Lemesos International Film Festival

I went to the local international film festival here which was pretty awesome! The movies rocked, so it was great fun! I will have more on that on my Summer in Cyprus page in the Travel section soon. Pat on the back for getting myself out and about!

I am a really healthy eater. I don’t eat meat, gluten and my dairy is minimal. I also don’t drink Soda and I hardly ever eat fast food. Only exceptions are a portion of fries sometimes or something similar like that. I am a pretty good cook and I love preparing healthy food.

My breakfast usually consists of Gluten Free Oatmeal and Coconut Milk and then I add something to make it more interesting. Sometimes that’s honey, sometimes raisins, cinnamon or fruit etc. Well the other week I came across a delicious Oatmeal Recipe via tumblr and I was dying to try it out. The recipe couldn’t be easier, and it’s absolutely perfect for warm or hot summers!

I named it: Sunshine Breakfast ☀ Photo & Recipe below 🙂

Sunshine Breakfast
Sunshine Breakfast:

List of Ingredients

  • 3 Frozen chopped Bananas
  • your desired portion of Oatmeal
  • your desired amount of Coconut Milk
  • Fruit of Choice: 1 Pear for me in this case
  • Coconut flakes
  • some Cinnamon powder

Preparation:

The bananas need to be in good condition, so when they are ready for eating, chop them up in little bits and freeze them overnight. In the morning, let the bananas sit out for 5-10 minutes (depending on your room temperature) Add Coconut Milk to them and then blend them with a smoothie or hand blender. The consistency level is completely up to you. You can add more milk at a time to achieve the right amount of consistency that you are happy with. Then just add your oatmeal in. I don’t cook mine in summer, I just mix it in. Then add your extra fruit if desired and other mix-ins. I added Cinnamon and Coconut flakes.

The great thing about this recipe is that you don’t need extra honey, or sugar or raisins since the bananas are already sweet enough. This is SO refreshing & delicious! It’s something you can definitely have fun with and make your own versions. It’s also super healthy and very filling! 🙂

Good Food Good Mood

I also drink homemade fruit & veggie smoothies regularly. In fact I’m about to finish one right now. I try to aim for 1-3 glasses every day, but there are days I skip mainly because I run out of ingredients. No doubt these are a lifesaver! I don’t get sick anymore at all which is amazing! Here’s a little recipe for you below.

Tropical Green Smoothie

The 2 last images above are taken from: Eat Clean Train Mean Live Green Facebook page which has tons of Inspirational Food, Exercise & Recipe posts & photos in the Album section, so go ahead and check that out. I love going through it, it’s awesome!

All right kids, that’s all for this week. My question for you this week is What do you have for Breakfast? I am very curious to hear your answers! 🙂 Please post them in the comments section below.

I am wishing you a super healthy and happy week ahead, filled with plenty of Sunshine & Smiles! ☀
