Let’s get right to it!

It’s getting hotter over here on the island. Highs are now around 34-38+ C (93-100+ F) & the humidity has most definitely risen too. I know because, I am just finding out how much sweat my face can actually produce. I am pretty sure, this is healthy.  So far, I’m loving the weather. ☀ ☀ ☀ Every day is super sunny & I am pretty sure this powerful sun could make the most miserable person smile! 🙂

Workout Hours: Probably around 5+ hours of mostly cardio this week.

Because of the workout increase which is burning more calories, I’ve been eating more too. I have just realized that I’ve been eating mostly vegan food this summer, probably about 95% of the time. Which is pretty awesome! I think more than 50% of the food I’ve been eating is raw too. (maybe around 60-65% if not higher) I also haven’t had any desserts in the past 3 months or so. I’m simply not craving them. I believe it’s all weather related. I always crave refreshing healthy delicious & nutritious food when it’s hot.

Last time I shared with you a delicious breakfast recipe you can make at home, and today I am sharing with you my recent favourite go to lunch or dinner meal. I don’t have this every day, it’s more like once or twice a week, but whenever I do, it’s sure a special treat!

How good does that look? Yum! It tastes even better!

gluten free veggie wrap

This is another one of those Recipes that you can completely alter to your preference. Below is a list of ingredients for the Veggie wrap above. I used a Gluten Free wrap simply because I have gluten issues, but you can use whatever kind you prefer.

Gluten Free Veggie Wrap:

  • Wrap (of any kind suited to your diet)
  • 1 small onion chopped
  • 1 or 2 cucumbers cut in half then chopped
  • some chopped cabbage

Dressing Sauce: (about equal amounts of each)

  • Sesame oil
  • Sweet chili sauce
  • Soy sauce (sodium reduced)

The prep is pretty easy. I use tin foil on the bottom and then close my wrap up after preparation so it’s less messy to eat.

Chop up the veggies in bits and place them inside the wrap. Then combine all the sauce ingredients in a small sauce bowl and stir them with a spoon and then drizzle it on top of your veggies.

I’ve included 2 more Veggie variations below. Click on the photo for a larger view. Like I said, you can use any veggies you like. I don’t heat up the wrap in the summer, only in winter. So everything is super fast and easy to make, and no oven needed.


Beach Days: 1 Super Epic Fun Filled Beach Day! 🙂

Beach day was Sunday so it was truly an awesome Sun filled Sunday Funday! It was about 37+ C on Sunday so it was a perfect day for the beach. I brought my flippers & water goggles with me which was a great idea for snorkelling & swimming. I felt like I got a better leg workout with the flippers. I am also collecting seashells which I’m going to make an interesting collage with later. I started collecting them earlier this year from different beaches from my trips, so I have some from Spain & Portugal too.

By the way, the sand on the beach on Sunday was burning hot like an Arizona Desert! The flip flops didn’t help much to protect my feet as they sank in the burning sand. Ouch! I just ran across to the shore, where the sand was cooler, as fast as possible. Funny thing happens when I get to the beach… I lay out my towel perfectly on the sand & almost never end up using it. I’d rather spend every single second being emerged inside the soothing Mediterranean Sea. Even the floating device which I was just testing out for a few minutes cannot compare to the feeling of being inside the water.

After a few hours at the beach, I went over to La Isla which is an awesome Beach Day Club. I’ve passed by this place a few times before & it got my attention instantly because of the easy going tiki lounge design and vibe. It was my first visit and I had arrived on a perfect day! The DJ created an epic Sunday Funday atmosphere with his amazing music playlist. The place was quiet busy and the majority of people were dancing to the music. The rest were chilling with their cocktails either at their table or down below on the sunbeds & some were enjoying water sports nearby. I made a few videos with my phone to capture the atmosphere, but they didn’t come out ok which is a shame. I will revisit and take proper footage with my camera! 🙂

When we arrived, my face was sweating like crazy! It’s definitely not a lot of fun having to wipe your face in a public place every 2 minutes. The solution? Put your sunglasses on, act cool & order a frozen cocktail! 🙂 Ta-da! The Frozen Passion fruit Margarita above was the perfect answer to my little dilemma. I watched the sun set from my chair. What a beautiful day! 🙂

As usual I’ve been drinking yummy Fruit & Veggie Smoothies and I have 2 Delicious Recipes for you made from the same ingredients. These are SO filling! Having 2-3 glasses is like having a meal. I made these yesterday and today. I love to give my smoothies names too, simply because it’s fun.

Ingredients:

  • Watermelon
  • Oranges
  • Celery leaves
  • Cucumber(s)
  • Frozen berries of your choice
  • Water

Keep in mind that the recipes below make a large batch of smoothies. This is great for a small group of people. You can also put them in a glass bottle and store them in the fridge for the day. They are best drank fresh, but I’ve read that when stored properly they are absolutely fine for a few days in the fridge. I drink mine fresh.

Orange you glad it’s Watermelon

  • 2 giant watermelon slices
  • 2 oranges
  • some celery leaves
  • 1 cucumber
  • frozen berries: I used Strawberries & Raspberries
  • water as needed

Water Melon Me Orange

  • 1 big watermelon slice
  • some celery leaves
  • frozen berries: I used Strawberries
  • 2 cucumbers
  • water as needed

The more Water you use, the more liquid the consistency of the smoothie will be, and the quicker this natural goodness will enter your bloodstream. You can also use a juicer to get rid of the fruit pulp if you prefer. The benefit there is that your body will be able to digest the juice quickly since it’s all in liquid form, so you will start feeling the benefits from the juice in under 20 minutes. The pulp and skin from fruit contains tons of nutrients and fiber so it is also quite filling but will enter your bloodstream at a slower rate.
